We have a gravity draft masonry smokehouse that we built on the farm. It is very similar to the smoke house my Great Grandpa had. We do a dry cured hickory smoked bacon...sliced and whole slab. Please read Sally Falon's article on nitrites in bacon to find out why we choose to continue to use sodium nitrite. We do an artisinal bacon without any chemicals for yield or cure enhancement. We smoke the bacon for 12 hours over real hickory logs. We do a brown sugar smoked sausage that is out of this world. We are hoping to be adding some jerky products in the near future. We are also building a meat cave to make some dry-cured Spanish style hams.
